General Manager : Neal Kovacik
Neal has been the general manager of the Maumee Bay Brewing Co. since 2010. As general manager Neal has made many additions to the business such as the Café and Mutz. He can also be held responsible for canning Buckeye beer for the first time in over 40 years. Outside of work Neal enjoys kayaking and fishing as well as catching up on his sleep. He loves the everyday challenge of running 3 restaurants, 2 bars, and a brewery all out of one building but his favorite part of his job is the people, both employees and customers.
Restaurant Manager : Brian Welborn
Brian has a wealth of knowledge and experience in the fine dining and restaurant industry. After spending 12 years working in Honolulu with everything from fine dining to concerts and conventions Brian moved to Ohio. He then became a part of the Maumee Bay Brewing Co.’s productions, before the building itself was renovated, and has been crucial to its operation ever since. He loves spending time with his kids and attending their sporting events in his time outside of work.
Brew Master : Jon Koester
After brewing in his own home for 4 years, Jon began brewing at Maumee Bay in 2007 under Phil Pollack. When Jon is not at work, he can still be found experimenting at his house with home brews, or out at the bowling alley with friends. He loves everything about the brewing process from scheduling the brews to drinking the final product and never fails to keep the taps at Mutz, and the Maumee Bay Brew Pub flowing with superb draughts.
Head Chef : Timothy Childers
Tim was hired as the head chef of the Maumee Bay Brewing Co. in 2009. A self-taught gourmet chef with three children. When he isn’t whipping up savory entrees in the kitchen, he loves to spend time reading books and frolicking outside with his family. Tim admits though it isn’t easy successfully running two restaurants and catering private events all out of one kitchen, the key is persistence. His favorite dishes are the Bone-In Ribeye with a side of Hash Browns from Rockwell’s, as well as the Brew Pub’s Port-Salude Sliders with hand-cut chips.
Dining Room Manager : Dawn Yoho
Dawn has excelled in many different positions since she started in 1999 as a hostess at Arrowhead Brewing Company. Unfortunately Arrowhead closed in 2000 but Dawn continued on with the company, moving on to work at the Maumee Bay Brew Pub. She then became a server and later a bartender. In 2003 she was transferred to Rockwell’s restaurant in Dayton, OH where she was then promoted to a management position. She eventually transferred back to the Toledo location where she is currently the Dining Room Manager. Outside of work Dawn loves spending time with her husband and two young sons. She also enjoys relaxing with a good book in her alone time.
Mutz Manager : Amanda Schmidt
Amanda has been the manager of Mutz since 2008. She keeps busy attending Lourdes College for Nursing and spending time with young daughter. In her rare free time, Amanda likes to support the businesses and special events in downtown Toledo. She also enjoys a cold pint of any of the Maumee Bay Brewing Company beers.
The Cafe Manager : Lee Ferguson
Lee has been in the hospitality business for 30 + years as a chef and front of the house manager at various locations. He has been with Maumee Bay for 1 year and has brought his knowledge and leadership to both the front an back of the house.
When he is not working, Lee enjoys spending time with family & friends, golfing and believe it or not Cooking!
Pastry Chef : Janelle Rice
Janelle has been filling the Café shelves with tasty treats since the very beginning. She studied culinary arts at the Culinary Institution of America, however she is primarily self taught when it comes to baking. She recommends trying anything chocolate mousse from the Patisserie, as well as anything and everything you’ve never tried before!
Event Coordinator : Maureen Rader
Maureen started at The Oliver House in August of 2015. She has been in the hospitality business for over 35 years. Most recently as an event coordinator for the past 10 years. Her favorite thing about her job is getting to know the customers and making sure that they have a fabulous experience! When not at work she enjoys spending time with her two daughters, reading or crocheting.
Human Resources : Beth Melnek
Beth, with nearly 40 years of experience, is a respected member of Toledo’s food and beverage community. She is known for jumping in and working along side her team to ensure the proper event execution. With customers she understands and sincerely appreciates their business. She has veteran insights – she has worked in the front and back of the house and carries that to help create a successful work environment. Married to her wonderful husband Brian for nearly 30 years. They have two children and two grandchildren that keep them very busy.
Accounting Manager : Dawn Cowell
Dawn joined the team at Maumee Bay Brewing Co. in 2013. She brought a wealth of knowledge with her accounting background. Outside of work Dawn loves spending time with her husband of 22 years and their two children. She also enjoys reading and scrap booking.
